My kid just asked if she could go to the corner store and buy shaving cream for slime.
I said yes.
But then she kept going (you know how kids are).
Can I get candy? A popsicle? Gum? Mango Juice?
We settled on her making lemonade.
So grab one lemon.
She came back with 3.
(And 2 bottles of shaving cream.)
It’s fine. We’ve got a whole afternoon of activities now.
Lemonade.
Slime.
And making these cookies.
They’re vegan. Do you care? I love it because it makes these sound healthy. (They’re not really, but they’re delicious.)
Make a batch now and freeze them for lunchbox treats!

Vegan Oat Cookies
Makes just over a dozen.
This is my sister-in-law’s recipe. We’ve been wolfing them down for years. ✨
Ingredients
1 cup (140 g) all-purpose flour
1/3 cup (65 g) light brown sugar
2 tsp baking powder
1/4 tsp table salt
1 cup (100 g) old-fashioned or quick oats
½ cup coconut oil, melted
2 tsp vanilla extract
1/3 - 1/2 cup raisins or chocolate chips, optional
1 tbsp water, or more as needed
Preparation
Preheat oven to 350 degrees F.
Grease a baking tray.
Whisk flour, brown sugar, baking powder, and salt together in a medium bowl until well incorporated, about 20 seconds.
Stir in the oats, melted coconut oil, vanilla, and raisins or chocolate chips if you’re using. Add 1 tbsp water, or more as needed, if the mixture won’t hold together in a ball. (It’s gonna seem annoyingly dry and may crumble a bit as you shape these, but that’s okay. They’ve got no eggs to bind.)
Form a ball with 2 tbsps of dough and flatten it slightly on your prepared baking tray. Repeat with the rest of the dough.
Bake until the bottoms turn golden brown and the tops aren’t shiny anymore, about 9-11 minutes.
